Our wine vinegars begin life from specially selected premium California wines. To convert the wines into vinegar, we use a slow & delicate fermentation process known as the "Orléans method". This method, made famous by the French, dates back to the middle ages and was patented in the 16th century.

Like great wine, great vinegar comes with age. Our wine vinegars are carefully made over a period of 12 to 24 months and contain no preservatives, and are not pasteurized in order to prevent degradation of the taste. Most mass-produced brands on the market are made in huge aluminum tanks with a mere 24 hour aging process.

Because of the care required during the delicate Orléans method, it produces the absolute highest quality and best tasting vinegar available. We are one of the few who offer such high quality vinegars using this old world method.

15 Year Balsamic

Following a millennium old tradition, our 15 Year Balsamic Vinegar comes from Modena, Italy. It begins with the juice of the Trebbiano grape simmered in copper pots and then aged for 15 years in small oak, cherry, mulberry, chestnut and juniper barrels. It has an intense brown color with a sweet, smooth, tangy fruity flavor. It easily compliments both sweet and savory dishes. Drizzle over salads, fresh or grilled vegetables, meats, or even fruits such as cantaloupe. Combine it with our Extra Virgin Olive Oil to make an outstanding dipping oil! Makes an amazing reduction to brush over salmon or use as a glaze for ribs and it's great poured over fresh mozzarella cheese with tomatoes and basil! Golden Balsamic

Our California Golden Balsamic Vinegar is delightfully sweet with just enough pucker. It has a naturally beautiful amber color and slight floral tones of the sweet Muscat grape. The zesty flavor and floral tones enhance the natural flavors of salads and grilled vegetables.
